L’Heure Propice //

Gros Manseng and Chardonnay are raised on fine lees in vats. Fermentation
is carried out with selected and multiplied yeasts. The fermentation takes place in thermoregulated stainless steel tank afterstoving on mud at 0°C for a few days. Fermentation is stopped by the cold to keep naturalresidual sugars in order to obtain the right balance between freshness and sweetness.
After aclay collage and a stabilization by the cold, the wine is filtered and then bottled.
