AOP Saint-Mont – red

L’Atelier //

Manual harvest. The selection is made upon receipt at the winery. De-stemming, crushing and vatting. Maceration and fermentation for 8 to 12 days in stainless steel tanks. Run-off of the free-run wine and separation of the press wine from the marc. Controlled malolactic fermentation. Aged in stainless steel tanks. Cold stabilisation and clarification before packaging.

Wine Tasting

A blend of Tannat, Pinenc and Cabernet Sauvignon, this wine is dark red in colour with a fine, complex, fresh, woody aroma. Very supple in the mouth and round, marked by the fruit, it will flatter dry ham, cold meats, white meats, poultry, soft or pressed cheeses.

AOP Madiran – red

L’Atelier //

Before the harvest, a maturity check is carried out on each plot. The grapes are then destemmed and crushed before being transferred to vats for 15 to 21 days of maceration and fermentation under temperature control. After this period, we proceed to the draining of the free-run wine, then recover the marc to obtain the press wine. The wine is then aged for 24 months, including 3 months in barrel, before being racked, blended and bottled. Before sells, bottles are stored several months in a cool, dark place.

Wine Tasting

This wine has a lovely purple robe, an intense and complex nose. Supple on the palate, it has notes of blackcurrant and sour cherry, with a powerful structure of round and spicy tannins. Perfect pairing with duck, mushroom omelettes, game,stew, goulash. Serve at16°C.

AOP Pécharmant – red

L’Atelier //

Clay-limestone soil and tran (iron pellets). Ridging and de-cultivation of the vineyard. Use of organic fertiliser, manure, no weedkillers. Vines aged between 25 and 35 years. Sustainable vineyard management. Green harvesting during the summer. The wine is vinified in stainless steel vats with pre-fermenting cold maceration and a long vatting period of 20 months.

Wine Tasting

With ruby-garnet robe, this wine offers intense aromas of fruits of the forest, slightly spiced. Ample in mouth with a fruity attack, it presents a very beautiful structure with marked and melted tannins. Comes along with duck breasts, prime ribs, games and dishes in sauce, refined cheeses.

Skin maceration on all grape varieties except the Ugni-Blanc. Pressing with separation of thedifferent qualities of juice (drop, 1st presses, 2nd presses).
Static severe static settling inisothermal vats, stalling on fine vines. Fermentation by vine for 10 to 20 days inthermoregulated stainless steel vats, at low temperature with selected yeasts. The differentgrape varieties are assembled after tasting and analysis, stabilized, filtered, then bottled in the year. Bottle 75cl ou Bag-in-Box

AOP Cotes de Bergerac – Soft white

The grapes are harvested at the over-ripe, sun-kissed stage. They are then gently pressed to give a rich must which will be vinified at a controlled temperature (18-20°C) to preserve its fruity aromas. The wine is then aged for 5 months on fine lees in order to complete the natural stabilisation of the wine.

Wine Tasting

Very pretty pale yellow color, nose of a good intensity. This wine brings you a rich and sophisticated range of aromas : apricot, banana, quince and mango. It adds freshness and lightness thanks to itsrefined and perfectly balanced structure. It is ideal as an aperitive as for accompanying foie gras or desserts. Serve between 8 to 10°C.

IGP Côtes de Gascogne – Rosé

Pellicular maceration at low temperature for 6 to 12 hours and bleeding for the oldest vines. Direct pneumatic pressing (separation of the press wines) for the young vines coming into production, especially the Tannat. Severe static cold settling in isothermal vats, stabulation on fine lees at 3°C for a fortnight. Fermentation by grape variety in thermo-regulated stainless steel tanks, at low temperature with selected and multiplied yeasts to ensure the completion of fermentation. The fermentation lasts 10 to 20 days.

Wine Tasting

With a pale salmon pink robe, the nose is intense, very perfumed, characterized by cherry, mint and rhubarb. Mouth nicely well-balanced, fresh. A beautiful harmony between 6 grapes, each one bringing their own qualities. Perfect match with aperitif, pies, grilled fish & grilled meat.
