The “Cuvée Gastronome” offers a range of three wines, from exceptional terroirs and elegant local grape varieties, resulting in fine, harmonious wines that highlight aromas, flavors, and texture.
Everything blends harmoniously to express the very best of the wine.
AOP MADIRAN – POWERFUL RED
Cuvée Gastronome
Maceration from 3 to 6 weeks
Fermentation at 28°C
Ageing in barrels, with about 30% to 50% new barrels

Tannat, Cabernet Franc, Cabernet Sauvignon
Wine Tasting

Wine that balances itself thanks to power, fruits, notes of blackberries and tannins already melted.
The texture is fleshy, the aromas developed, which promises a nice evolution.

Very slow pressing, with inerting to preserve freshness.
Fermentation in vats at 16-18°C.
Aged for 10 months on fine lees in stainless steel vats with stirring of the lees.

A lovely freshness emerges, with a pleasant, ample volume on the palate.
Aromas of exotic fruits, mango, pineapple, and white flowers are released, resulting in a wine of great finesse.
Ideal as an aperitif, with smoked salmon, elver casserole, baby squid with Espelette pepper, chicken breast, Ossau-Iraty cheese, risotto…
